1 pound ground beef or turkey
1 cup of uncooked rice
2 cups beef or chicken broth
1 can (15 oz) crushed tomatoes
1 onion, diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon salt, adjust to taste
1/2 teaspoon black pepper
2 cups shredded cheese
1/4 cup fresh parsley, chopped (optional)
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix the ground beef (or turkey) with salt, pepper, and half of the Italian seasoning. Form into bite-sized meatballs.
In a medium skillet, heat a drizzle of olive oil over medium heat. Add the meatballs and sauté until browned on all sides.
Remove meatballs and sauté diced onion until translucent, then add minced garlic.
In a large mixing bowl, combine rice, crushed tomatoes, broth, remaining Italian seasoning, salt, and pepper. Stir in sautéed onion and garlic along with browned meatballs.
Pour the mixture into a greased 9×13 baking dish.
Sprinkle half of the shredded cheese over the mixture, then gently stir it in. Top with remaining cheese.
Cover with foil and bake for about 25 minutes. Then remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Garnish with parsley if using, and serve.
