Description
This cherry galette is a rustic French-style tart with a flaky crust and sweet-tart cherry filling. It’s perfect for showcasing fresh or frozen cherries in a dessert that looks impressive but requires minimal effort.
Ingredients
-
1 store-bought pie crust (or homemade)
-
2 cups fresh or frozen pitted cherries (halved)
-
¼ cup granulated sugar
-
1 tbsp cornstarch
-
½ tsp vanilla extract
-
1 tbsp lemon juice
-
1 egg (for egg wash)
-
Optional: coarse sugar for topping, vanilla ice cream for serving
Instructions
-
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
-
Prepare filling: In a bowl, toss cherries with sugar, cornstarch, lemon juice, and vanilla.
-
Assemble galette: Roll out pie crust on the baking sheet. Spoon cherry filling into the center, leaving a 2-inch border. Fold edges over the filling, pleating as needed.
-
Brush & bake: Brush crust edges with beaten egg and sprinkle with coarse sugar if desired.
-
Bake for 35–40 minutes, until crust is golden and filling is bubbling.
-
Cool slightly before serving—delicious warm with a scoop of ice cream!
Notes
-
Use frozen cherries if fresh aren’t available—just thaw and drain first.
-
Add a pinch of cinnamon or almond extract for extra depth of flavor.
-
This dessert is best served the same day for optimal crust texture.
