- 2 chicken breasts, diced
- 1 cup cooked rice (brown or white)
- 1 medium sweet potato, diced
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- Salt & pepper to taste
- 1/4 cup black beans (optional)
- 2 tbsp chopped green onions
- 1 tbsp lime juice
Instructions
- Roast the Sweet Potatoes: Toss sweet potatoes with olive oil, paprika, cumin, salt, and pepper. Roast at 200°C (400°F) for 20 minutes.
- Cook the Chicken: Sauté diced chicken in a pan with garlic powder, salt, and pepper until golden brown.
- Assemble the Bowl: Place rice in bowls, top with chicken, roasted sweet potatoes, and black beans (if using).
- Garnish & Serve: Drizzle with lime juice and sprinkle with green onions. Enjoy warm!
