Ingredients

  • 1 cup cooked rice (brown or white)
  • 1 medium sweet potato, diced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • 1/4 cup black beans (optional)
  • 2 tbsp chopped green onions
  • 1 tbsp lime juice

Instructions

  • Roast the Sweet Potatoes: Toss sweet potatoes with olive oil, paprika, cumin, salt, and pepper. Roast at 200°C (400°F) for 20 minutes.
  • Cook the Chicken: Sauté diced chicken in a pan with garlic powder, salt, and pepper until golden brown.
  • Assemble the Bowl: Place rice in bowls, top with chicken, roasted sweet potatoes, and black beans (if using).
  • Garnish & Serve: Drizzle with lime juice and sprinkle with green onions. Enjoy warm!
