1 medium onion, diced
2 cloves of fresh garlic, minced
2 carrots, diced
2 celery stalks, diced
1 pound of cooked chicken, shredded
1 cup of wild rice blend
8 cups of low-sodium chicken broth
2 teaspoons of dried thyme
Salt and pepper to taste
1 cup of heavy cream or coconut milk
Fresh parsley for garnish
Instructions
Heat the olive oil in a large pot over medium heat.
Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the veggies soften and the onion turns translucent.
