4 bone-in chicken thighs
2 tablespoons of olive oil
1 medium onion, diced
4 cloves of garlic, minced
1 bell pepper, diced
1 can (14.5 oz) diced tomatoes
1 cup of chicken broth
1 teaspoon of dried oregano
1 teaspoon of thyme
1 bay leaf
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat until shimmering.
Season chicken thighs with salt and pepper, place skin-side down in the pan and sear for about 5-7 minutes until golden. Flip and cook for another 4-5 minutes. Remove the chicken and set aside.
In the same pan, add diced onions and bell peppers. Sauté for about 5 minutes until soft. Add minced garlic and cook for another 1-2 minutes until fragrant.
