  • 2 tablespoons of olive oil
  • 1 medium onion, diced

  • 1 bell pepper, diced

  • 1 teaspoon of dried oregano
  • 1 teaspoon of thyme
  • 1 bay leaf

  • Reduce heat to low, cover, and simmer for about 30-40 minutes until chicken is tender and cooked through.
