1 pound of boneless, skinless chicken breasts, thinly sliced
2 cups of egg noodles
2 tablespoons of vegetable oil
3 cloves of garlic, minced
1 cup of shredded carrots
1 cup of bean sprouts
1 red bell pepper, sliced
1 cup of snap peas
¼ cup of soy sauce
2 tablespoons of oyster sauce
1 tablespoon of cornstarch
2 tablespoons of water
Salt to taste
Black pepper to taste
1 green onion, sliced
Instructions
In a large pot, bring water to a boil and cook the egg noodles according to package instructions, usually about 4-5 minutes. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the sliced chicken to the skillet in a single layer, season with salt and pepper, and cook for 5-7 minutes until golden brown. Remove and set aside.
In the same skillet, add garlic, shredded carrots, bell pepper, and snap peas. Stir-fry for about 3-4 minutes until crisp-tender.
Return the chicken to the skillet, add bean sprouts and noodles, then pour in soy sauce, oyster sauce, and cornstarch mixture. Toss gently.
Adjust seasoning to taste and let everything heat through for another 2-3 minutes.
Sprinkle sliced green onions on top before serving.
