3 cups cooked chicken, shredded
1 can (10 oz) enchilada sauce
1 can (15 oz) black beans, rinsed and drained
1 cup corn, frozen, canned, or fresh
2 cups shredded cheese, cheddar or Tex-Mex blend
8 small corn tortillas, or 6 large ones
1 teaspoon cumin
½ teaspoon chili powder
1 small onion, diced
2 cloves garlic, minced
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add a drizzle of olive oil. Toss in the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic, cumin, and chili powder, stirring for another minute until fragrant.
Add shredded chicken, black beans, corn, and half of the enchilada sauce. Stir it all together and let it warm up for 3-5 minutes. Season with salt and pepper to taste.
If using small tortillas, cut them in half; for large tortillas, quarter them. Fit them nicely in your baking dish.
In a 9×13-inch baking dish, layer the chicken mixture, followed by a layer of tortillas, and a sprinkle of cheese. Repeat until ingredients are used up, finishing with tortillas on top.
Pour the remaining enchilada sauce over the top layer of tortillas, ensuring they are well covered. Sprinkle the remaining cheese on top.
Cover with aluminum foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
Let it rest to cool for a few minutes before serving. Garnish with fresh cilantro if desired.
