1 lb of boneless, skinless chicken breast, cut into strips
1 tablespoon of olive oil
1 bell pepper, sliced
1 medium onion, sliced
2 cloves of garlic, minced
1 teaspoon of ground cumin
1 teaspoon of chili powder
½ teaspoon of paprika
Salt and pepper, to taste
2 cups of cooked white rice
Juice of 1 lime
Fresh cilantro for garnish (optional)
In a bowl, toss the chicken strips with olive oil, cumin, chili powder, paprika, salt, and pepper until well-coated.
In a large skillet over medium-high heat, add the seasoned chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
In the same skillet, add the sliced onion and bell pepper and sauté for 4-5 minutes until tender.
Add the minced garlic and cook for another minute until fragrant.
Add the cooked rice and chicken back to the skillet, drizzle with lime juice, and mix well. Adjust seasoning as needed.
