Delight in a fresh and vibrant Chicken Fajita Salad drizzled with a zesty Honey Chipotle Dressing, perfect for a healthy lunch or dinner.
Ingredients
¾ cup olive oil
½ cup red wine vinegar
½ chipotle pepper minced
1 tbsp adobo sauce
1 tbsp honey
1 tsp dijon mustard
1 tsp oregano
½ tsp cumin
½ tsp garlic powder
3 chicken breasts
2 bell peppers cut into strips
1 onion cut into thin slices
6 cups romaine lettuce chopped
1 can black beans drained and rinsed
½ cup cheddar cheese grated
¼ cup cherry tomatoes halved
1 lime cut into wedges for serving
Instructions
- In a bowl, combine olive oil, red wine vinegar, minced chipotle pepper, adobo sauce, honey, dijon mustard, oregano, cumin, and garlic powder to create the dressing. Whisk until well blended.
- Grill or sauté the chicken breasts until fully cooked, about 6-7 minutes per side. Remove from heat and let rest before slicing.
- In the same skillet, sauté the bell peppers and onion until tender.
- In a large bowl, combine chopped romaine, black beans, cheddar cheese, and cherry tomatoes.
- Top the salad with sliced chicken and sautéed vegetables. Drizzle with the honey chipotle dressing.
- Serve with lime wedges on the side.
Notes
For added flavor, marinate the chicken in the dressing for a few hours before cooking. Adjust the heat level by adding more or less chipotle as desired.
