Ingredients
— For the Chicken Fajitas —
1 lb boneless skinless chicken breasts, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
— For the Tortilla Bowls —
4 large flour tortillas
Cooking spray or olive oil
— Optional Toppings —
Sour cream
Shredded cheese
Guacamole
Fresh cilantro
Lime wedges
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease the outside of oven-safe bowls or an upside-down muffin tin.
2. Press tortillas over the bowls or muffin tin to shape into bowls. Bake for 10–12 minutes until crisp and golden. Let cool.
3. In a large skillet, heat olive oil over medium-high heat. Add chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
4. Cook chicken for 6–8 minutes, stirring occasionally, until browned and cooked through. Remove from skillet.
5. In the same skillet, add sliced peppers and onions. Sauté for 5–6 minutes until tender and slightly charred.
6. Fill each tortilla bowl with chicken, sautéed vegetables, and your choice of toppings.
7. Serve with lime wedges and fresh cilantro.
Notes
Use store-bought tortilla bowls for convenience.
Swap chicken with shrimp or steak.
Add cooked rice or black beans for a heartier version.
