Description
Classic Italian dish featuring tender chicken breasts dipped in a lemon-egg batter, sautéed until golden, then simmered in a bright lemon-butter sauce.
Ingredients
4 boneless skinless chicken breasts
1 cup all-purpose flour
3 large eggs
1/2 cup grated Parmesan cheese
1/4 cup fresh lemon juice
1 cup chicken broth
4 tbsp unsalted butter
2 tbsp olive oil
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Pound chicken breasts to even thickness.
2. Season flour with salt and pepper.
3. Beat eggs and Parmesan cheese together in a shallow bowl.
4. Dredge each chicken breast in flour, then dip into egg mixture.
5. Heat olive oil and 2 tbsp butter in a skillet over medium heat.
6. Sauté chicken until golden and cooked through, about 4-5 minutes per side. Remove and keep warm.
7. Add lemon juice and chicken broth to the skillet; simmer for 3 minutes.
8. Stir in remaining butter until sauce thickens slightly.
9. Return chicken to the pan and spoon sauce over it.
10. Garnish with fresh parsley and serve.
Notes
Serve with pasta or steamed vegetables.
Adjust lemon juice to taste for desired tartness.
Use fresh lemons for best flavor.
