1 tablespoon of olive oil
1 medium onion, diced
2 cloves of garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon of dried thyme
1 teaspoon of dried oregano
6 cups of chicken broth
2 cups of cooked chicken, shredded
1 pound of gnocchi
1 cup of heavy cream
2 cups of fresh spinach
Salt and pepper to taste
Grated Parmesan cheese for serving
Heat olive oil in a large pot over medium heat. Sauté the diced onions for about 5 minutes until soft and translucent.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add carrots and celery, cooking for another 5 minutes until they start to soften.
Sprinkle dried thyme and oregano, stirring to combine.
Add chicken broth to the pot and bring to a gentle boil.
Add shredded chicken to the boiling broth.
Stir in gnocchi and allow to cook for 2-3 minutes until they float to the top.
