Ingredients
3 cups frozen hash browns
thawed slightly
2–3 cups cooked chicken
diced
1/4 cup bacon bits
1 cup shredded cheddar cheese
1 (10.5-ounce) can condensed cream of chicken soup
1/2 cup milk
12 ounces frozen mixed vegetables
thawed slightly
1/8 teaspoon dried thyme
12–14 Ritz crackers
crushed
1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the hash browns, cooked chicken, bacon bits, 1 cup of cheddar cheese, cream of chicken soup, milk, mixed vegetables, and thyme. Stir until well combined.
- Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
- In a separate bowl, mix the crushed Ritz crackers and the remaining 1/2 cup of cheddar cheese. Sprinkle this mixture on top of the casserole.
- Bake in the preheated oven for 30 minutes, or until the casserole is bubbly and golden on top.
- Remove from oven, let it cool slightly, then serve warm.
Notes
For extra flavor, consider adding some chopped onions or garlic to the chicken mixture. You can also substitute the mixed vegetables based on your preference.
