Description
Chicken Paprikash is a comforting and flavorful dish made with tender chicken, a rich paprika sauce, and yogurt, served over egg noodles.
Ingredients
1 tablespoon olive oil
1 1/4 pounds boneless skinless chicken breasts
1/2 cup diced yellow onion
1 1/2 teaspoons grated or minced garlic
1 1/2 tablespoons sweet Hungarian paprika
1 1/2 teaspoons smoked paprika
1/2 cup low sodium chicken broth
14.5 ounces diced fire roasted tomatoes
undrained
1/2 cup plain Greek yogurt
2% or whole milk Greek yogurt
Flat leaf parsley for garnish
egg noodles for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
- Add the chicken breasts to the skillet, cooking until golden brown on both sides.
- Stir in the garlic, sweet paprika, and smoked paprika, cooking for an additional minute until fragrant.
- Pour in the chicken broth and diced tomatoes, bringing the mixture to a simmer.
- Cover and let simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it into pieces, and return it to the skillet. Stir in the Greek yogurt until well combined.
- Serve the Chicken Paprikash over cooked egg noodles and garnish with chopped flat leaf parsley.
Notes
For a thicker sauce, you can let it simmer uncovered for a few extra minutes. Adjust the seasoning to taste.
