Instructions
Preheat the oven to 400°F (200°C).
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken until it’s about ½ inch thick.
Set up the breading station: In one dish, add the flour with a sprinkle of salt and pepper. In another, whisk the eggs. In a third dish, combine the breadcrumbs, garlic powder, Italian seasoning, and more salt and pepper.
Dip each chicken breast into the flour, transfer to the egg, then coat with the breadcrumb mixture.
In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Add the breaded chicken and cook for 3-4 minutes on each side until golden brown.
Warm the marinara sauce in a small saucepan over low heat.
Place the cooked chicken on a baking sheet. Spoon marinara sauce over each piece and sprinkle with mozzarella cheese.
Bake in the preheated oven for about 10 minutes until the cheese is bubbly.
Slice your sandwich rolls in half. Place each piece of chicken in a roll, garnish with fresh basil, and add more sauce if desired.
Serve warm and enjoy!
