  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)

  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 4 crusty sandwich rolls (like ciabatta or hoagie rolls)
  • Fresh basil leaves (for garnish)

  • Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken until it’s about ½ inch thick.
  • Set up the breading station: In one dish, add the flour with a sprinkle of salt and pepper. In another, whisk the eggs. In a third dish, combine the breadcrumbs, garlic powder, Italian seasoning, and more salt and pepper.
  • Dip each chicken breast into the flour, transfer to the egg, then coat with the breadcrumb mixture.
  • In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Add the breaded chicken and cook for 3-4 minutes on each side until golden brown.
  • Warm the marinara sauce in a small saucepan over low heat.
  • Place the cooked chicken on a baking sheet. Spoon marinara sauce over each piece and sprinkle with mozzarella cheese.
  • Bake in the preheated oven for about 10 minutes until the cheese is bubbly.
  • Slice your sandwich rolls in half. Place each piece of chicken in a roll, garnish with fresh basil, and add more sauce if desired.
