Description
This Chicken Pasta Salad combines tender cooked chicken, colorful veggies, and pasta tossed in a light, tangy dressing. It’s a perfect, refreshing dish for summer picnics and warm-weather meals.
Ingredients
2 cups cooked rotini pasta, cooled
2 cups cooked chicken breast, diced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/3 cup chopped fresh parsley
1/2 cup Italian dressing (store-bought or homemade)
Instructions
1. Cook pasta according to package instructions. Drain and rinse with cold water. Let cool.
2. In a large bowl, combine cooked pasta, diced chicken, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
3. Pour Italian dressing over the salad.
4. Toss gently to coat all ingredients evenly.
5. Chill in the refrigerator for at least 1 hour before serving to enhance flavors.
6. Serve cold or at room temperature.
Notes
Use rotisserie chicken for convenience.
Add olives or feta cheese for extra flavor.
Store leftovers covered in the fridge up to 2 days.
