1 tablespoon of olive oil
1 medium onion, diced
2 cloves of garlic, minced
1 cup of carrots, diced
1 cup of celery, diced
1/2 cup of frozen peas
2 cups of cooked chicken, shredded
4 cups of chicken broth
1 cup of heavy cream
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
Salt and pepper to taste
1 cup of puff pastry or refrigerated biscuits, cut into bite-sized pieces
Heat the oil in a large pot over medium heat.
Sauté the diced onion until translucent, about 3-4 minutes, adding minced garlic for the last minute.
Stir in the diced carrots and celery and sauté for an additional 5 minutes.
