Instructions
Prepare the chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to about 1/2 inch thick.
Set up your breading station: In three shallow dishes, place the flour in the first bowl, beat the eggs in the second bowl, and mix the breadcrumbs, garlic powder, paprika, and a pinch of salt and pepper in the third bowl.
Bread the chicken: Coat each piece of chicken in flour, followed by the beaten eggs, and then press into the breadcrumb mixture.
Fry the schnitzels: Heat the vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown.
Make the mushroom gravy: In the same skillet, add butter and melt, then sauté sliced mushrooms until browned.
Build the gravy: Pour in the chicken broth, simmer for 2 minutes, then add heavy cream and stir until combined.
Serve it up: Place schnitzel on a plate, ladle mushroom gravy over the top, and garnish with chopped parsley.
