  • 1.5 lbs chicken thighs (bone-in, skin-on, or boneless)
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 celery stalks, sliced
  • 4 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

  • Instructions

  • Heat the olive oil over medium heat in a large pot or Dutch oven.
  • Season the chicken thighs with salt and pepper, then sear skin-side down for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes, then remove chicken from pot.
  • In the same pot, add onion, garlic, carrots, and celery and sauté for 5-7 minutes until soft.
  • Add chicken broth, potatoes, thyme, and bay leaf. Stir well, then bring to a gentle boil.
  • Return the seared chicken thighs to the pot, skin-side up.
  • Reduce heat to low, cover, and simmer for 30-35 minutes until chicken is cooked through and tender.
  • Shred the chicken if desired, and adjust seasoning with additional salt and pepper. Remove bay leaf before serving.
