1.5 lbs chicken thighs (bone-in, skin-on, or boneless)
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
3 large carrots, sliced
2 celery stalks, sliced
4 medium potatoes, peeled and cubed
4 cups chicken broth
1 teaspoon dried thyme
1 bay leaf
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
Heat the olive oil over medium heat in a large pot or Dutch oven.
Season the chicken thighs with salt and pepper, then sear skin-side down for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes, then remove chicken from pot.
In the same pot, add onion, garlic, carrots, and celery and sauté for 5-7 minutes until soft.
Add chicken broth, potatoes, thyme, and bay leaf. Stir well, then bring to a gentle boil.
Return the seared chicken thighs to the pot, skin-side up.
Reduce heat to low, cover, and simmer for 30-35 minutes until chicken is cooked through and tender.
Shred the chicken if desired, and adjust seasoning with additional salt and pepper. Remove bay leaf before serving.
