Ingredients
2 cups cooked sushi rice 1 tablespoon rice vinegar 1 teaspoon sugar 2 cooked chicken breasts, sliced 1 avocado, sliced 1 cucumber, julienned 1 carrot, julienned 1 sheet nori, shredded 1 tablespoon sesame seeds 2 tablespoons low-sodium soy sauce 1 tablespoon sriracha mayo (optional) Pickled ginger (optional)
Instructions
Cook sushi rice and season with rice vinegar and sugar. Let cool slightly. Slice cooked chicken and prep vegetables. Divide rice into bowls. Top with chicken, avocado, cucumber, carrot, and shredded nori. Drizzle with soy sauce and sriracha mayo, if using. Sprinkle with sesame seeds. Serve with pickled ginger.
Notes
Use rotisserie chicken for ease. Swap out veggies with your favorites: edamame, radishes, or bell pepper. Chill rice bowls slightly for a more authentic sushi-style experience.
