1.5 lbs (about 680 g) boneless, skinless chicken thighs, cut into chunks
2 tablespoons olive oil
1 medium onion, chopped
3 cloves fresh garlic, minced
1 teaspoon ground ginger
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
Salt and pepper, to taste
1 can (15 oz) chickpeas, drained and rinsed
1 cup dried apricots, halved
1 cup chicken broth
1/2 cup whole almonds, toasted
2 tablespoons honey
Fresh cilantro or parsley, for garnish
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onions and sauté until they become translucent (about 5 minutes), then toss in the minced garlic and cook for another minute.
Sprinkle in the ground ginger, cumin, cinnamon, and turmeric, and stir for about 30 seconds.
Add the chicken chunks, season with salt and pepper, and brown the chicken on all sides (about 5-7 minutes).
Stir in the drained chickpeas, dried apricots, honey, and chicken broth, then bring to a simmer.
Cover and let it simmer gently for about 30-40 minutes, stirring occasionally.
In the last 5 minutes of cooking, add the toasted almonds.
Garnish with fresh cilantro or parsley before serving.
