Description
Chicken Tzatziki Rice Bowls combine juicy, seasoned grilled chicken with fluffy rice, fresh veggies, and a creamy homemade tzatziki sauce. This Mediterranean-inspired dinner is flavorful, healthy, and easy to assemble.
Ingredients
1 pound boneless skinless chicken breasts or thighs
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste
2 cups cooked white or brown rice
1 cup chopped cucumber
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup crumbled feta cheese
Fresh parsley or dill, for garnish
Instructions
1. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
2. Add chicken and marinate for at least 20 minutes (or up to 4 hours).
3. Grill or pan-sear chicken over medium heat for 5–7 minutes per side until fully cooked. Let rest, then slice.
4. Prepare rice and place it in serving bowls.
5. Top each bowl with chicken, cucumber, tomatoes, red onion, and feta.
6. Drizzle generously with tzatziki sauce.
7. Garnish with fresh herbs and serve.
Notes
Use store-bought tzatziki for convenience or make it from scratch.
Add kalamata olives or roasted chickpeas for extra texture.
Serve warm or chilled, depending on preference.
