Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
2 ripe peaches, sliced
2 tablespoons honey
1 tablespoon fresh lime juice
1 teaspoon lime zest
2 cloves garlic, minced
Salt and pepper to taste
Fresh thyme or basil for garnish (optional)
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, add garlic and sauté for 1 minute.
5. Add peach slices, honey, lime juice, and zest. Cook for 3-4 minutes until peaches soften and glaze thickens.
6. Return chicken to the skillet and spoon glaze over each piece.
7. Cook together for another 2 minutes to combine flavors.
8. Garnish with fresh thyme or basil before serving.
Notes
Use fresh ripe peaches for best flavor.
