- 1 can (15 oz) chickpeas, drained & mashed
- 1/2 cup grated carrots
- 1/2 cup zucchini, grated & squeezed dry
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chickpea flour (or all-purpose flour)
- 1 egg (or flax egg for vegan option)
- 1 tsp cumin
- 1/2 tsp paprika
- Salt & pepper to taste

Instructions
- Mix the Batter: In a bowl, combine mashed chickpeas, grated veggies, onion, garlic, flour, egg, and spices. Mix well.
- Form & Cook: Shape into small patties. Heat olive oil in a pan over medium heat. Cook fritters for 3-4 minutes per side until golden brown.
- Serve & Enjoy: Drain on paper towels and serve warm with yogurt dip or hummus.
Notes
- For extra crunch, bake at 200°C (400°F) for 20 minutes instead of frying.
- Add fresh herbs like parsley or cilantro for extra flavor.
- Store leftovers in the fridge for up to 3 days.
