Ingredients

  • 1 can (15 oz) chickpeas, drained & mashed
  • 1/2 cup grated carrots
  • 1/2 cup zucchini, grated & squeezed dry
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chickpea flour (or all-purpose flour)
  • 1 egg (or flax egg for vegan option)
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil (for fryin

Instructions

  • Mix the Batter: In a bowl, combine mashed chickpeas, grated veggies, onion, garlic, flour, egg, and spices. Mix well.
  • Form & Cook: Shape into small patties. Heat olive oil in a pan over medium heat. Cook fritters for 3-4 minutes per side until golden brown.
  • Serve & Enjoy: Drain on paper towels and serve warm with yogurt dip or hummus.

Notes

  • For extra crunch, bake at 200°C (400°F) for 20 minutes instead of frying.
  • Add fresh herbs like parsley or cilantro for extra flavor.
