Ingredients
1 lb boneless skinless chicken breasts
1 tbsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp salt
1 tbsp olive oil
2 cups cooked jasmine rice
1 cup black beans rinsed and drained
1 cup corn kernels
1 cup diced tomatoes
1 avocado sliced
1 cup shredded lettuce
1 can coconut milk
2 tbsp lime juice
1 tbsp honey
1 tbsp chopped fresh cilantro
Instructions
- In a bowl, mix the chili powder, paprika, garlic powder, onion powder, cumin, and salt.
- Rub the spice mixture over the chicken breasts.
- Heat olive oil in a skillet over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side. Remove and let rest.
- In a small saucepan, combine coconut milk, lime juice, honey, and cilantro. Warm over low heat, stirring occasionally.
- Slice the chicken and assemble the bowls: start with jasmine rice, then add black beans, corn, diced tomatoes, and sliced avocado.
- Top with shredded lettuce and drizzle the coconut lime sauce over everything.
Notes
For extra flavor, marinate the chicken overnight in the spice mix. You can substitute quinoa for rice for a healthier option.
