Ingredients
Scale
1 pound of sirloin steak
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon of smoked paprika
1 red bell pepper, cut into chunks
1 zucchini, sliced into rounds
1 cup of cherry tomatoes
Fresh basil leaves for garnish (optional)
1 cup of fresh parsley leaves (no stems)
1/4 cup of fresh oregano leaves or 1 tablespoon dried oregano
3 cloves of garlic, minced
1/2 teaspoon of red pepper flakes
1/2 cup of olive oil for chimichurri
2 tablespoons of red wine vinegar
Salt and pepper to taste for chimichurri
Instructions
Trim any excess fat off the sirloin steak and cut it into 1-inch cubes.
In a mixing bowl, combine the olive oil, salt, black pepper, and smoked paprika. Toss the steak cubes in the marinade and let them sit for at least 25 minutes.
While the meat is marinating, prep your veggies: cut the red bell pepper into chunks, slice the zucchini into rounds, and wash the cherry tomatoes.
In a food processor, add the parsley, oregano, minced garlic, and red pepper flakes. Pulse until finely chopped. Add the olive oil and red wine vinegar, and season with salt and pepper to taste.
Soak wooden skewers in water for 30 minutes to prevent burning. Alternate threading the steak cubes, red bell pepper, zucchini slices, and cherry tomatoes onto the skewers.
Preheat the grill to medium-high heat.
Lay the skewers on the grill and cook for 8-10 minutes, turning occasionally. Aim for medium-rare doneness (145°F internal temperature).
Remove the skewers from the grill, let them rest, then drizzle with chimichurri sauce and garnish with fresh basil if desired.
