Description
This Chinese Chicken Fried Rice is a quick and delicious meal packed with tender chicken, fresh vegetables, and perfectly seasoned rice—ideal for busy weeknights.
Ingredients
2 tbsp vegetable oil
2 eggs, lightly beaten
2 cups cooked and chilled jasmine rice
1 cup cooked chicken breast, diced
1/2 cup frozen peas and carrots, thawed
1/4 cup chopped green onions
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
Salt and pepper to taste
Instructions
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
2. Add eggs and scramble until fully cooked. Remove and set aside.
3. Add remaining oil to the skillet.
4. Stir in chicken and cook for 2–3 minutes until heated through.
5. Add peas and carrots; cook for another 2 minutes.
6. Add cooked rice to the skillet, breaking up any clumps.
7. Stir in soy sauce, oyster sauce (if using), and sesame oil.
8. Toss in the scrambled eggs and green onions.
9. Stir-fry everything together for 2–3 minutes.
10. Season with salt and pepper to taste and serve hot.
Notes
Use day-old rice for best texture.
Add chili flakes or sriracha for a spicy kick.
Swap chicken with shrimp, tofu, or pork if desired.
