These tropical-inspired chicken skewers are glazed in a fiery chipotle-pineapple marinade and finished with a creamy Bang Bang sauce. Every bite bursts with sweet heat and smoky flavor—perfect for grilling season!

For the Skewers:

  • 1 ½ lbs (680g) boneless chicken thighs or breasts, cut into chunks

  • 1/2 cup pineapple juice

  • 2 chipotle peppers in adobo, finely chopped

  • 2 tbsp adobo sauce

  • 1 tbsp soy sauce

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • Salt and pepper, to taste

  • Pineapple chunks (optional, for skewering)

  • Skewers (soak if wooden)

For the Bang Bang Sauce:

  • 1/3 cup mayo

  • 2 tbsp sweet chili sauce

  • 1 tbsp sriracha

  • 1 tsp honey or maple syrup (optional)


Instructions

  1. Marinate Chicken: In a bowl, mix pineapple juice, chipotle peppers, adobo sauce, soy sauce, olive oil, garlic, salt, and pepper. Toss chicken in the marinade. Cover and refrigerate for at least 30 minutes (up to 4 hours).

  2. Make Bang Bang Sauce: Mix mayo, sweet chili sauce, sriracha, and honey until smooth. Chill until ready to serve.

  3. Skewer & Grill: Thread chicken (and pineapple if using) onto skewers. Grill over medium-high heat for 10–12 minutes, turning until charred and cooked through.

  4. Serve: Drizzle or dip with Bang Bang sauce. Garnish with green onions or cilantro, if desired.

Notes

  • You can bake these at 425°F (220°C) for 20–25 minutes if not grilling.

  • Add bell peppers or red onions to skewers for color and crunch.

  • Adjust heat by reducing chipotle or sriracha as needed.
