These tropical-inspired chicken skewers are glazed in a fiery chipotle-pineapple marinade and finished with a creamy Bang Bang sauce. Every bite bursts with sweet heat and smoky flavor—perfect for grilling season!
Ingredients
For the Skewers:

1 ½ lbs (680g) boneless chicken thighs or breasts, cut into chunks

1/2 cup pineapple juice

2 chipotle peppers in adobo, finely chopped

2 tbsp adobo sauce

1 tbsp soy sauce

1 tbsp olive oil

2 garlic cloves, minced

Salt and pepper, to taste

Pineapple chunks (optional, for skewering)

Skewers (soak if wooden)
For the Bang Bang Sauce:

1/3 cup mayo

2 tbsp sweet chili sauce

1 tbsp sriracha
-
1 tsp honey or maple syrup (optional)
Instructions

Marinate Chicken: In a bowl, mix pineapple juice, chipotle peppers, adobo sauce, soy sauce, olive oil, garlic, salt, and pepper. Toss chicken in the marinade. Cover and refrigerate for at least 30 minutes (up to 4 hours).

Make Bang Bang Sauce: Mix mayo, sweet chili sauce, sriracha, and honey until smooth. Chill until ready to serve.

Skewer & Grill: Thread chicken (and pineapple if using) onto skewers. Grill over medium-high heat for 10–12 minutes, turning until charred and cooked through.

Serve: Drizzle or dip with Bang Bang sauce. Garnish with green onions or cilantro, if desired.

You can bake these at 425°F (220°C) for 20–25 minutes if not grilling.
