  • Instructions

  • Make the crust: In a large bowl, mix the flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter to blend until it resembles coarse crumbs. Gradually stir in the ice water until the dough comes together. Form it into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
  • Preheat the oven: While your dough is chilling, preheat your oven to 350°F (175°C).
  • Roll out the dough: On a floured surface, roll the chilled dough into a circle that’s about 12 inches in diameter. Carefully transfer it into a 9-inch pie plate, pressing it into the sides and trimming the excess.
  • Prepare the filling: In a large bowl, whisk together corn syrup, granulated sugar, brown sugar, melted butter, and eggs until smooth. Stir in vanilla and bourbon, mix well. Toss in chocolate chips and pecan halves.
  • Pour & bake: Pour the filling into your prepared crust, spreading it out evenly. Bake in the preheated oven for about 50-60 minutes, or until the filling is set and has a slight jiggle when nudged. Cover the crust edges with foil if they start to brown too much.
