Ingredients
— Crust —
1 1/2 cups chocolate cookie crumbs (like Oreos)
1/4 cup melted butter
— Chocolate Filling —
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
4 oz semi-sweet chocolate, chopped
1 teaspoon vanilla extract
— Cherry Layer —
1 1/2 cups cherry pie filling (store-bought or homemade)
— Whipped Cream Topping —
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Chocolate shavings or curls, for garnish (optional)
Instructions
1. Preheat oven to 350°F (175°C). Mix cookie crumbs and melted butter. Press into a 9-inch pie pan. Bake for 8–10 minutes. Let cool.
2. In a saucepan, whisk sugar, cornstarch, and salt. Gradually add milk and cook over medium heat, whisking constantly, until thickened and bubbling.
3. Remove from heat. Stir in chocolate and vanilla until smooth.
4. Pour chocolate filling into cooled crust. Smooth the top. Chill for at least 3 hours until set.
5. Spread cherry pie filling evenly over the chocolate layer.
6. In a bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
7. Top pie with whipped cream. Garnish with chocolate curls if desired.
8. Chill until ready to serve.
Notes
Use dark chocolate for a richer flavor.
Make your own cherry topping with fresh cherries, sugar, and cornstarch.
