  • 4 boneless, skinless chicken breasts

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1 garlic clove, minced

  • 1 tbsp fresh basil, chopped (or 1 tsp dried basil)

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1/2 cup marinara sauce (optional, for topping)


Instructions

  • Preheat the oven to 375°F (190°C). Grease a baking dish with a little olive oil or non-stick spray.

  • In a bowl, combine ricotta, mozzarella, Parmesan, garlic, and basil. Season with salt and pepper.

  • Slice each chicken breast horizontally (but not all the way through) to create a pocket.

  • Stuff each chicken breast with the cheese mixture, securing with toothpicks if needed.

  • Heat olive oil in a skillet over medium-high heat. Sear the chicken on both sides until golden (about 3–4 minutes per side).

  • Transfer chicken to the prepared baking dish and bake for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).

  • If desired, spoon marinara sauce over the chicken during the last 5 minutes of baking.

  • Remove from the oven and let rest for a few minutes before serving.

Notes

  • Add spinach or sun-dried tomatoes to the cheese filling for an extra burst of flavor.

  • Pair with a fresh salad or garlic bread for a complete meal.

  • For a lighter version, use part-skim ricotta and mozzarella.
