Description

These Chocolate Coconut Latte Fudge Popsicles combine rich cocoa, smooth coffee, and creamy coconut milk into a refreshing frozen treat perfect for summer.


Ingredients

Scale

1 can (13.5 oz) full-fat coconut milk

1/2 cup strong brewed coffee or espresso (cooled)

1/3 cup unsweetened cocoa powder

1/3 cup maple syrup or honey

1 tsp vanilla extract

Pinch of sea salt

1/4 cup mini chocolate chips (optional)


Instructions

1. Add coconut milk, coffee, cocoa powder, maple syrup, vanilla, and salt to a blender.

2. Blend until completely smooth.

3. Stir in mini chocolate chips if using.

4. Pour the mixture evenly into popsicle molds.

5. Insert sticks and freeze for at least 6 hours or overnight.

6. To release, run warm water over the outside of the molds for a few seconds and gently pull out.

Notes

Use decaf coffee for a caffeine-free version.

For added texture, roll the popsicles in shredded coconut after unmolding.

Store in the freezer for up to 2 weeks.
