Ingredients
Scale
1 ¾ cups all-purpose flour
1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons pure vanilla extract
1 cup boiling water
1 cup heavy cream
8 ounces chopped high-quality dark chocolate
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well blended.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Use an electric mixer on medium speed to combine for about 2 minutes.
Stir in the boiling water carefully; the batter will be thin.
Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
In a medium saucepan, heat 1 cup of heavy cream until just about to boil. Remove from heat and add 8 ounces of chopped dark chocolate. Stir until shiny.
Assemble the cake by placing one layer on a serving plate, spreading ganache on top, then topping with the second layer and pouring remaining ganache over the top.
Notes
A rich, decadent chocolate cake perfect for chocolate lovers, featuring moist layers and a silky ganache.
