  • 1 cup heavy cream
  • 8 ounces chopped high-quality dark chocolate

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well blended.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Use an electric mixer on medium speed to combine for about 2 minutes.
  • Stir in the boiling water carefully; the batter will be thin.
  • Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  • In a medium saucepan, heat 1 cup of heavy cream until just about to boil. Remove from heat and add 8 ounces of chopped dark chocolate. Stir until shiny.
  • Assemble the cake by placing one layer on a serving plate, spreading ganache on top, then topping with the second layer and pouring remaining ganache over the top.
