1 ½ cups of powdered sugar (sifted)
2 tablespoons of unsweetened cocoa powder
2 tablespoons of milk (use any kind you like)
½ teaspoon of peppermint extract (adjust to taste)
1 tablespoon of softened butter
8 ounces of semi-sweet chocolate chips
1 teaspoon of coconut oil (optional)
Instructions
In a medium bowl, combine the sifted powdered sugar and cocoa powder. Add the milk, peppermint extract, and softened butter. Mix until well combined and forms a smooth dough.
Dust hands with powdered sugar, shape a teaspoon of dough into a ball, then flatten into a patty shape. Repeat until all the filling is shaped.
Place the shaped patties on a lined baking sheet and chill in the fridge for at least 30 minutes.
In a heatproof bowl, combine chocolate chips and coconut oil (if using). Microwave in short bursts, stirring until melted and smooth.
Dip each chilled patty into the melted chocolate and let excess drip off before placing back on the lined baking sheet. Optionally, sprinkle crushed peppermint candies on top.
Refrigerate the dipped patties for about 30 minutes to allow the chocolate to harden.
