Description
These Chocolate Raspberry Cups combine rich dark chocolate with juicy raspberries and a silky cream layer. They’re bite-sized, decadent, and perfect for holidays or anytime you crave a chocolatey fruit treat.
Ingredients
1 1/2 cups semi-sweet or dark chocolate chips
1 tablespoon coconut oil
1/3 cup fresh raspberries
1/4 cup cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Extra raspberries, for garnish (optional)
Instructions
1. Line a mini muffin tin with paper liners.
2. Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
3. Spoon about 1 teaspoon of melted chocolate into each liner and spread up the sides to coat. Freeze for 10 minutes.
4. In a bowl, mash raspberries. Mix with softened cream cheese, powdered sugar, and vanilla extract until smooth.
5. Spoon about 1 teaspoon of raspberry cream into each chocolate cup.
6. Cover each with more melted chocolate and smooth the tops.
7. Freeze or refrigerate for 15–20 minutes until set.
8. Garnish with extra raspberries before serving, if desired.
Notes
Use a piping bag for cleaner layers.
Store in the fridge for up to 5 days or freeze for longer.
Swap raspberries with strawberries or blueberries for a fruity twist.
