1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
8 oz dark chocolate (60-70% cacao), chopped
2 cups heavy cream, divided
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh raspberries, plus extra for garnish
6 oz dark chocolate, chopped
1/2 cup heavy cream
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large bowl, whisk together melted butter and sugar until combined. Beat in the eggs, one at a time, then stir in vanilla.
In a separate bowl, mix the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined. Watch out! Don’t overmix or the cake will end up dense.
Pour the batter into your prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
While the cake cools, melt 8 oz of dark chocolate over a double boiler or in the microwave in 20-30 second increments until smooth. Allow it to cool slightly.
In a mixing bowl, whip 1 cup of heavy cream with the powdered sugar and vanilla until soft peaks form. Gently fold the melted chocolate into the whipped cream until combined.
Stir in the fresh raspberries gently, making sure to keep some whole for that delightful burst of flavor.
Place the cooled chocolate cake on a serving plate. Spread the raspberry mousse evenly on top. Chill in the refrigerator for at least 2 hours.
