Instructions
- Make the Ganache:
- Heat the heavy cream and butter in a small saucepan over medium heat until just simmering.
- Pour the hot cream mixture over the chopped dark chocolate in a bowl. Let it sit for 2 minutes, then stir until smooth and glossy.
- Add the raspberry jam and mix until fully incorporated.
- Chill the Mixture:
- Cover the bowl and refrigerate for 2-3 hours, or until the ganache is firm enough to scoop.
- Shape the Truffles:
- Using a small scoop or spoon, portion out the ganache and roll into 1-inch balls. Place them on a parchment-lined baking sheet. Chill for another 30 minutes.
- Coat the Truffles:
- Roll each truffle in cocoa powder for a classic finish, or dip in melted dark chocolate for an extra indulgent coating. Place coated truffles back on the parchment paper to set.
- Serve or Store:
- Let the truffles set at room temperature for 10 minutes, then serve. Store leftovers in an airtight container in the refrigerator for up to 1 week.
