Ingredients
For the crust:
-
1 ½ cups chocolate cookie crumbs (e.g., Oreo or chocolate graham crackers)
-
2 tbsp sugar
-
6 tbsp unsalted butter, melted
For the cheesecake filling:
-
16 oz cream cheese, softened
-
½ cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
1 cup sour cream
-
3 oz semi-sweet chocolate, melted
-
2 tbsp cocoa powder
For the strawberry topping:
-
2 cups fresh strawberries, sliced
-
2 tbsp sugar
-
1 tbsp lemon juice
Instructions
-
Prepare the crust:
In a bowl, mix the chocolate cookie crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a greased 9-inch springform pan to form a crust. Bake at 325°F (160°C) for 8–10 minutes, then set aside to cool. -
Prepare the cheesecake filling:
In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, melted chocolate, and cocoa powder until fully combined and smooth. -
Assemble the cheesecake:
Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula and bake at 325°F (160°C) for 50–55 minutes, or until the center is set but still slightly jiggly. Let the cheesecake cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours or overnight. -
Prepare the strawberry topping:
In a bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for about 15–20 minutes to release their juices. -
Assemble and serve:
Once the cheesecake has chilled, top it with the macerated strawberries. Slice and serve!
Notes
-
For a smoother texture, make sure the cream cheese is softened before mixing.
-
If you prefer a no-bake version, you can use a no-bake cheesecake filling instead.
-
Make sure to allow enough time for the cheesecake to cool and set properly in the fridge.
