  • 2 tbsp sugar

  • 1 tbsp lemon juice


Instructions

  1. Prepare the crust:
    In a bowl, mix the chocolate cookie crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a greased 9-inch springform pan to form a crust. Bake at 325°F (160°C) for 8–10 minutes, then set aside to cool.

  2. Prepare the cheesecake filling:
    In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, melted chocolate, and cocoa powder until fully combined and smooth.

  3. Assemble the cheesecake:
    Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula and bake at 325°F (160°C) for 50–55 minutes, or until the center is set but still slightly jiggly. Let the cheesecake cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours or overnight.

  4. Prepare the strawberry topping:
    In a bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for about 15–20 minutes to release their juices.
