Ingredients
½ cup strawberries sliced or cut into small pieces
1 tbsp white granulated sugar
½ large orange juiced
½ cup white granulated sugar
½ cup butter
⅓ cup light corn syrup
¾ cup all purpose flour
¼ cup unsweetened cocoa powder
1 cup vanilla ice cream
1 cup chocolate ice cream
½ cup whipped cream
6 oz milk chocolate melted
Instructions
- In a bowl, combine sliced strawberries with sugar and orange juice. Let sit for 15 minutes to macerate.
- Preheat your oven to 350°F (175°C).
- In another bowl, mix butter and white sugar until creamy. Stir in light corn syrup.
- Add flour and cocoa powder to the mixture until well combined.
- Shape dough into taco shells using molds or by placing on a baking sheet and shaping while still warm.
- Bake for 10-12 minutes or until firm. Allow to cool.
- Once cooled, fill each cookie taco with a scoop of vanilla and chocolate ice cream, and top with whipped cream and melted chocolate.
- Serve the tacos with macerated berries on the side or on top for a fresh finishing touch.
Notes
Feel free to mix and match the ice cream flavors and adjust the sweetness of the macerated berries to your preference.
