  • 1/2 lb Genoa salami, chopped
  • 1/2 lb ham, chopped
  • 1/2 lb pepperoni, chopped
  • 1/2 lb provolone cheese, chopped
  • 1/4 cup roasted red peppers, chopped
  • 1/4 cup sliced black olives, chopped
  • 1/4 cup red onion, thinly sliced
  • 1 cup shredded lettuce
  • 1/2 cup Italian dressing
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  • Prep the Filling: In a large bowl, combine the chopped salami, ham, pepperoni, provolone cheese, roasted red peppers, olives, and red onion. Toss to combine.
  • Season: Add the shredded lettuce, Italian dressing, olive oil, red wine vinegar, salt, and pepper. Toss everything together until evenly coated.
  • Assemble the Sandwiches: Slice the hoagie rolls horizontally but not all the way through.
  • Stuff the Rolls: Generously fill each roll with the chopped mixture. Press down lightly to compact the filling.
  • Serve: Serve immediately, or wrap the sandwiches tightly for later.
