Ingredients
Scale
2 cups all-purpose flour
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup toffee bits
1 cup pecans or walnuts, chopped
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar
1/2 cup heavy cream
1 teaspoon vanilla extract (for frosting)
More toffee bits for garnishing
Instructions
Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
Cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the buttermilk and vanilla extract.
In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix just until combined. Fold in the toffee bits and chopped nuts, if using.
Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for about 10 minutes before turning them out on wire racks to cool completely.
For the frosting, beat the softened butter until creamy, gradually adding powdered sugar and alternating with heavy cream until the desired consistency is reached. Mix in vanilla extract.
Once the cake layers are completely cool, place one layer on a serving plate and spread with frosting. Top with the second layer and frost the top and sides of the cake.
Slice and serve to enjoy!
