Ingredients
4 oz cream cheese
softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
8 slices thick-cut bread (brioche or Texas toast works best)
2 large eggs
1/2 cup milk
1 tsp vanilla extract
1/2 tsp ground cinnamon
2 tbsp granulated sugar
Pinch of salt
2 tbsp butter (for frying)

1 tsp ground cinnamon
Instructions
- In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth to create the filling.
- In another bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, granulated sugar, and a pinch of salt to prepare the French toast batter.
- Spread a generous amount of the cream cheese filling on four slices of bread, then top with the remaining four slices to create sandwiches.
- Preheat a skillet over medium heat and melt the butter.
- Dip each sandwich in the French toast batter, allowing it to soak for a few seconds on each side.
- Place the soaked sandwiches in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
- While the French toast is cooking, mix the granulated sugar and ground cinnamon together in a shallow dish.
