  • 1/4 cup of granulated sugar
  • 1 teaspoon of salt
  • 1 tablespoon of ground cinnamon
  • 1/4 cup of packed brown sugar
  • 1/4 cup of unsalted butter, melted
  • 1/2 cup of powdered sugar (for drizzle)
  • 12 tablespoons of milk (for drizzle)

  • Instructions

  • In a mixing bowl, combine the flour, instant yeast, and salt. In a separate bowl, mix warm water, olive oil, and granulated sugar. Pour the wet ingredients into the dry ingredients and stir until everything comes together. Knead the dough for about 5-7 minutes until smooth and elastic.
  • Place your dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place until it doubles in size—about 1 hour.
  • While the dough is rising, mix the brown sugar and cinnamon together in a bowl. Melt the butter and set it aside.
  • Once the dough has risen, punch it down gently and transfer it to a lightly floured surface. Roll it into a rectangle about 12×16 inches. Brush the surface with melted butter and sprinkle the cinnamon-sugar filling evenly across the dough.
  • Starting from one long end, gently roll the dough into a log. Pinch the edges to seal the roll, then place it seam-side down. Cut into 1-inch pieces and arrange them in a greased 9×13-inch baking dish.
  • Cover the pan with a clean towel and let the rolled pieces rise for another 30-45 minutes, until puffy.
  • Preheat your oven to 375°F (190°C). Once it has risen, drizzle olive oil on top and use your fingers to press dimples into the dough. Bake for 20-25 minutes until golden brown.
  • While the focaccia is cooling, whisk together powdered sugar and milk to make a glaze. Drizzle over the top once it has cooled slightly.
