Ingredients
4 tablespoons unsalted butter

⅓ cup brown sugar
packed
1½ tablespoons all purpose flour
2½ teaspoons ground cinnamon
pinch salt
1 cup unsalted butter
softened but still cool to the touch
1 ⅓ cups granulated sugar
1 ¾ teaspoons pure vanilla extract
1 large egg
1 large egg yolk
2 ¾ cups all purpose flour

Instructions
- In a mixing bowl, combine the softened butter, brown sugar, all purpose flour, ground cinnamon, and a pinch of salt to create the cinnamon sugar filling. Mix until well blended and set aside.
- In a large bowl, beat together the unsalted butter and granulated sugar until light and fluffy. Add the vanilla extract, egg, and egg yolk, mixing until well combined.
- In a separate bowl, whisk together the all purpose flour, baking powder, cornstarch, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Take a portion of the cookie dough and flatten it slightly before placing a spoonful of the cinnamon sugar filling in the center. Roll the dough around the filling to form a ball and place on a baking sheet lined with parchment paper.
- Preheat your oven to 350°F (175°C). Bake the cookies for 12-15 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Ensure the butter is softened but not melted for optimal texture. Chill the cookie dough before baking for thicker cookies, if desired.
