Ingredients
For the Cookie Dough:
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
For the Cinnamon Filling:
- ¼ cup unsalted butter, melted
- ⅓ cup brown sugar
- 1 ½ tsp cinnamon
For the Glaze:
- ½ cup powdered sugar
- 1 tbsp milk
- ½ tsp vanilla extract
Instructions
1️⃣ In a bowl, cream together butter and sugar until light and fluffy. Mix in the egg and vanilla.
2️⃣ In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until combined.
3️⃣ Roll the dough into a rectangle (~¼-inch thick) between two sheets of parchment paper.
4️⃣ For the filling, mix melted butter, brown sugar, and cinnamon. Spread evenly over the dough.
5️⃣ Carefully roll the dough into a log, wrap in plastic wrap, and refrigerate for at least 30 minutes.
6️⃣ Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7️⃣ Slice the chilled dough into ¼-inch thick rounds and place on the baking sheet.
8️⃣ Bake for 10-12 minutes or until edges are lightly golden. Cool completely.
9️⃣ Mix glaze ingredients and drizzle over the cookies.
