  • 2 tablespoons of olive oil
  • 2 pounds of beef chuck, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 cloves of fresh garlic, minced
  • 4 carrots, sliced into rounds
  • 3 stalks of celery, chopped
  • 2 pounds of potatoes, diced
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 4 cups of beef broth
  • 2 tablespoons of tomato paste
  • 1 teaspoon of Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef chunks in batches. Brown them on all sides for about 5-7 minutes, then remove and set aside.
  • In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and stir for another minute until fragrant.
  • Toss in the carrots, celery, and potatoes. Stir to combine and cook for another 5 minutes.
  • Return the browned beef to the pot. Sprinkle in the thyme and add the bay leaf, beef broth, tomato paste, and Worcestershire sauce. Stir everything together, bringing it to a gentle simmer.
  • Reduce the heat to low, cover, and let it gently simmer for 1.5 to 2 hours.
  • Once done, taste the stew and add salt and pepper as needed.
  • Discard the bay leaf and ladle the stew into bowls. Top with chopped fresh parsley and serve.
