2 tablespoons of olive oil
2 pounds of beef chuck, cut into 1-inch pieces
1 large onion, chopped
3 cloves of fresh garlic, minced
4 carrots, sliced into rounds
3 stalks of celery, chopped
2 pounds of potatoes, diced
1 teaspoon of dried thyme
1 bay leaf
4 cups of beef broth
2 tablespoons of tomato paste
1 teaspoon of Worcestershire sauce
Salt and pepper to taste
Fresh parsley for garnish
Instructions
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef chunks in batches. Brown them on all sides for about 5-7 minutes, then remove and set aside.
In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and stir for another minute until fragrant.
Toss in the carrots, celery, and potatoes. Stir to combine and cook for another 5 minutes.
Return the browned beef to the pot. Sprinkle in the thyme and add the bay leaf, beef broth, tomato paste, and Worcestershire sauce. Stir everything together, bringing it to a gentle simmer.
Reduce the heat to low, cover, and let it gently simmer for 1.5 to 2 hours.
Once done, taste the stew and add salt and pepper as needed.
Discard the bay leaf and ladle the stew into bowls. Top with chopped fresh parsley and serve.
