  • Salt and pepper to taste
  • 1 cup of all-purpose flour
  • 4 tablespoons of olive oil
  • 4 tablespoons of unsalted butter, divided
  • 8 ounces of cremini or button mushrooms, sliced
  • 3 cloves of garlic, minced
  • 3/4 cup of Marsala wine
  • 1 cup of chicken broth
  • Fresh parsley, chopped for garnish

  • Instructions

  • Season chicken breasts with salt and pepper on both sides.
  • Dredge each chicken breast in flour, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
  • Add the chicken to the skillet in a single layer, cooking for about 4-5 minutes on each side until golden brown.
  • Remove the chicken from the pan and set aside.
  • In the same skillet, add remaining olive oil and butter. Toss in sliced mushrooms and sauté until golden brown and tender.
  • Add minced garlic and sauté for an additional minute.
  • Pour in the Marsala wine, scraping brown bits from the bottom of the pan, and let simmer for 2-3 minutes.
  • Add chicken broth and let the mixture simmer for another 5 minutes.
  • Return the chicken to the skillet, spoon sauce over the top, and simmer for about 5 minutes.
  • Garnish with fresh parsley and serve.
