For the Salad:
- 2 boneless, skinless chicken breasts
- 4 strips crispy bacon (chopped)
- 6 cups (300 g) romaine lettuce (chopped)
- ½ cup (75 g) cherry tomatoes (halved)
- ½ avocado (sliced)
- 2 hard-boiled eggs (sliced)
- ¼ cup (30 g) crumbled blue cheese (or feta)
- ¼ cup (30 g) red onion (thinly sliced)
For the Chicken Marinade:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 small garlic clove (minced)
- Salt & black pepper to taste

Marinate & Grill the Chicken:
- Mix olive oil, lemon juice, Dijon mustard, garlic powder, salt, and black pepper.
- Marinate the chicken for 15-30 minutes, then grill for 5-6 minutes per side until cooked through. Let rest, then slice.

Prepare the Dressing:
- Whisk together olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and black pepper.

Assemble the Salad:
- In a large bowl, toss the lettuce with half of the dressing.
- Arrange grilled chicken, bacon, tomatoes, avocado, eggs, blue cheese, and red onion on top.

- Swap blue cheese for feta or shredded cheddar if preferred.
