1 pound of kielbasa, sliced
2 cups frozen pierogi
1 medium onion, diced
3 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese
Salt and pepper, to taste
2 tablespoons olive oil
Chopped fresh parsley, for garnish
Instructions
In a skillet, heat the olive oil over medium heat. Add the diced onions and sauté until soft and translucent, about 5 minutes. Toss in minced garlic and sauté for another minute.
In your crockpot, spread half of the frozen pierogi at the bottom. Layer the cooked onions, garlic, and slices of kielbasa on top.
Mix cream of mushroom soup and sour cream in a separate bowl. Pour half of this mixture over your layers in the crockpot.
Add the remaining pierogi, followed by the rest of the kielbasa and onion mixture. Pour the remaining soup mixture over everything.
Season with salt and pepper, gently mix, cover, and cook on low for 6-8 hours or on high for 3-4 hours.
In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top and let it melt.
Once cooked, stir gently and serve hot, garnished with fresh parsley.
