3–4 lbs chuck roast
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons garlic powder
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 onion, chopped
4 cups beef broth
2 cups carrots, cut into chunks
2 cups celery, chopped
1–2 tablespoons balsamic vinegar
Pat the chuck roast dry with paper towels and season generously with salt, pepper, and garlic powder.
In a large pot or dutch oven, heat the olive oil over medium-high heat and sear the roast on all sides until golden brown.
Remove the roast and set it aside. In the same pot, add the chopped onions and cook until they begin to soften.
Pour in the beef broth and scrape the bottom of the pot to incorporate the browned bits.
Place the roast back in the pot, add carrots, celery, rosemary, thyme, and balsamic vinegar, and simmer.
Cover the pot and cook on low for 4-6 hours until the meat is tender.
Taste the broth and adjust seasoning as desired.
Remove the roast and vegetables to a cutting board, let the roast rest before slicing, and serve with the broth.
